Vegetable quiche

1 tbsp Olive oil
1/2 cup chopped onion
1/4 cup chopped bell pepper (different colours)
1/2 cup chopped fennel about 1/2” long
1/4 cup asparagus about 1/2” long
1 carrot cut in little sticks
3 eggs
1 cup Natura almond or soy unsweetened
Salt and pepper to taste
3/4 cup old cheddar cheese (if desired)
your favorite pie crust uncooked

Servings : 4


  1. In a sauce pan, gently sauté the vegetables in olive oil, just until they are semi-tender.
  2. Place the vegetables in the uncooked pie crust
  3. In a bowl, mix the eggs, the Natura, salt and pepper
  4. Pour this mix over the vegetables. Add the cheese (if desired)
  5. Bake in the oven at 350F for 40 minutes or until a knive inserted in the center of the quiche comes out clean.
  6. Serve with a green salad
