Tiramisu Pancakes

Ingredients

Vanilla Cream
1 cup Natura Barista oatmeal 2 tbsp. sugar
1 1⁄2 tbsp. Tapioca starch
1 tbsp. cornstarch
1 tbsp vegan butter
1 1⁄2 tsp. Vanilla extract


Pancakes
3⁄4 all-purpose flour 2 tbsp. sugar
1 tsp. baking powder 1⁄2 tsp. Salt
1⁄2 cup Natura Barista Oatmilk 1 tsp. Vanilla
Vegan butter (for frying)


Espresso
6 tablespoon brewed intense espresso -cold 2 tsp sugar
Extras
3 tbsp. Vanilla yogurt 2 tbsp. Cocoa powder

Preparation

1/ Vanilla Cream

Add the Oat Milk*, sugar, tapioca starch, and cornstarch to a medium size pot. Whisky to dissolve the ingredients into de milk. Add the butter and vanilla.
Heat up to medium heat while whisking regularly until the butter is melted. Keep heating and whisking constantly until it thickens. It will start to reduce more once it starts to boil.
Remove from the heat as soon as the mixture is thick and transfer to a bowl to cool down for 20-30 minutes before refrigerating for at least 2 hours.
Once cooled, the cream will thicken more. Transfer the cream to a stand mixer (a hand mixer works too!) and beat for 20 seconds or until it becomes creamy again.

2/ Pancakes

In a medium mixing bowl, mix the flour, sugar, baking powder, and salt. Pour in the Barista Oat Milk and vanilla extract and whisk until the batter is smooth.

Heat a teaspoon of vegan in a non-stick pan over medium heat. Spread the butter into a thin layer.

Pour 3 tbsp of batter into the pan to make one pancake, fit 2-3 pancakes into your pan if possible but do not overcrowd them.

Cook for 1-2 minutes, or until you see bubbles appear on top of the pancakes. Using a thin spatula, flip the pancakes and cook for another 2-3 minutes on the other side. Transfer the pancakes to a plate and repeat with the remaining batter.

3/ To assemble

On a small and deep plate, stir together the brewed espresso and, sugar. Dip one of the pancakes into the espresso for 1-2 seconds on each side.

Arrange the pancake on a plate. Spread about 1 tablespoon of the vanilla cream on top, and spread evenly. Place another pancake on top, and repeat the process until you have a stack as tall as you would like (I made mine with 5)

Finish with an extra layer of cream. Sprinkle cocoa powder on top of the pancake pile, and serve immediately.
