Shrimp risotto with caramelized onions

Ingredients

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 lbs chopped mushrooms
  • 2 big chopped onions
  • 1 tsp thyme
  • 1 cup vegetable broth
  • 2 cups almond beverage unsweetened
  • 1 1/2 cups basmati rice
  • 1/4 cup parmesan cheese
  • 1/2 cup swiss cheese
  • 1/2 cup parsley
  • 1 lb cooked shrimps

Servings : 6


Preparation

Melt the butter with the olive oil in a large deep nonstick skillet on medium-high heat.

Add mushrooms, onions, thyme and stir lightly.

Cover and cook 15 minutes or until the vegetables are golden brown.

Incorporate vegetable broth and Natura beverage. Bring to a boil.

Incorporate the rice. Turn down the heat to medium heat. Simmer 15-20 minutes or until the rice is tender. Remove from fire.

Add cheese, parsley and shrimps, stir lightly.

Cover and leave to rest 10 minutes or until shrimps are at desired temperature.
