Ingredients
500g spaghetti, cooked
2 cups Natura unsweetened soy milk
1/4 cup nutritional yeast
1/4 cup pasta water
1 1/2 tbsp vegan butter
1 tbsp all-purpose flour
1 tsp Dijon mustard
1 tsp black salt
Veggie Bacon Strips, cooked and
Pepper to taste
Instructions
- While your pasta is cooking, melt the butter in a medium-sized pan.
- Add flour to obtain a thick texture
- Immediately pour in 1 cup of milk, whisking continuously until you achieve a smooth white sauce.
- Add the nutritional yeast and continue whisking until everything is well incorporated.
- Add in the remaining ingredients, continuing to whisk.
- Cook the sauce for 5-6 minutes on medium-low heat,adding 1/4 cup of milk intermittently, and whisking constantly.
- Cook the Veggie Bacon Strips and cut them into small pieces.
- Incorporate them into the sauce, followed by the pasta water.
- Whisk until the mixture is smooth.
- Add in the cooked spaghetti and stir until completely covered.
- Serve hot, and top with extra bacon bites and vegan parmesan, if desired.
