Carbonara vegan sauce for pasta recipe

Ingredients

500g spaghetti, cooked
2 cups Natura unsweetened soy milk
1/4 cup nutritional yeast
1/4 cup pasta water
1 1/2 tbsp vegan butter
1 tbsp all-purpose flour
1 tsp Dijon mustard
1 tsp black salt
Veggie Bacon Strips, cooked and
Pepper to taste

Instructions

  1. While your pasta is cooking, melt the butter in a medium-sized pan.
  2. Add flour to obtain a thick texture
  3. Immediately pour in 1 cup of milk, whisking continuously until you achieve a smooth white sauce.
  4. Add the nutritional yeast and continue whisking until everything is well incorporated.
  5. Add in the remaining ingredients, continuing to whisk.
  6. Cook the sauce for 5-6 minutes on medium-low heat,adding 1/4 cup of milk intermittently, and whisking constantly.
  7. Cook the Veggie Bacon Strips and cut them into small pieces.
  8. Incorporate them into the sauce, followed by the pasta water.
  9. Whisk until the mixture is smooth.
  10. Add in the cooked spaghetti and stir until completely covered.
  11. Serve hot, and top with extra bacon bites and vegan parmesan, if desired.
