Ingredients
Serves 4
1 onion, chopped
2 garlic cloves, chopped
450 g (1 lb) veggie ground
1 can (796 ml) diced tomatoes
¼ cup tomato paste
4 cups chicken or vegetable stock
2 tsp. Italian seasoning
1 tsp. dried basil
1 tsp. dried oregano
Salt and black pepper to taste
6 dried lasagne sheets, broken into pieces
1 cup Barista Premium Vegetable Oat Drink
Toppings: Grated cheese of your choice, grated Parmesan and basil or chopped fresh parsley, to taste
Instructions
- Heat the olive oil in a large saucepan over medium-low heat. Add onion and garlic, and sauté until soft and fragrant.
- Stir in diced tomatoes, tomato paste, broth and spices. Season with salt and pepper to taste. Bring to a boil. Reduce heat and simmer for 5 minutes to allow flavors to blend.
- Add the lasagne pieces to the soup and cook for around 10 minutes, or until the pasta is tender.
- Reduce the heat to low and add the veggie ground and Barista Premium, stirring gently. Simmer for a further 3-5 minutes to heat through without boiling.
- Serve the soup hot, adding grated cheese and Parmesan cheese to the top of each bowl for a creamy texture. Garnish with fresh basil or parsley and serve immediately.
