Vegan Gluten-Free Alfredo Sauce

Ingredients

2 tablespoons vegan butter

2-3 cloves garlic, crushed

1 ¼ cups Natura’s organic gluten-free oat beverage (start with less, add more if needed)

cup vegan cream cheese

½ cup grated vegan Parmesan cheese

Salt and pepper, to taste

Parsley, to taste

Gluten-free pasta, enough for 4 servings


Instructions

Cook the gluten-free pasta according to package instructions in a large pot of salted boiling water. Drain and reserve about 1 cup of pasta water for adjusting the sauce consistency later. Set the pasta aside.

In a medium saucepan, melt the vegan butter over medium heat. Once melted, add the crushed garlic and sauté for about 1-2 minutes, or until fragrant but not browned.

Pour in 1 cup of Natura oat beverage, along with a pinch of salt and pepper. Stir to combine. Increase the heat to medium-high and bring the mixture to a gentle simmer, not a rolling boil.

Reduce the heat to medium. Add the vegan cream cheese, stirring continuously until the cream cheese is fully melted and the mixture is smooth. If the sauce seems too thick, gradually add more oat beverage until you reach your desired consistency.

Stir in the grated vegan Parmesan cheese, continuing to stir until the cheese is melted and the sauce is smooth and creamy.

Taste the sauce and adjust the seasoning with additional salt and pepper, if needed.

Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick or the pasta seems dry, add olive oil or Natura’s oat beverage to achieve a creamy consistency.

Divide the pasta among plates. Garnish with a little more grated vegan Parmesan and a sprinkle of fresh parsley or basil for color and freshness.
