This gingerbread-glazed cake loaf is a must for the upcoming holiday season. This moist cake made with our organic soy beverage is completely vegan and delicious for everyone!
Ingredients
Makes 1 cake loaf
½ cup vegetable oil
⅓ cup granulated sugar
⅓ cup brown sugar
¼ cup molasses
1 cup Natura organic soy milk
2 ½ cups all-purpose flour
2 tsp. baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 tsp. ground ginger
1 tsp. ground nutmeg
½ tsp. allspice, ground
1 pinch salt
Icing
1 cup powdered sugar
2 ½ to 3 tbsp. “Natura” organic soy milk
½ tsp. vanilla extract
Instructions
- Preheat oven to 350 F and grease a loaf pan.
- In a large bowl, whisk together vegetable oil, granulated sugar, brown sugar, molasses and “Natura” Organic Soy Milk until smooth.
- In a separate bowl, mix flour, baking soda, baking powder, salt and spices.
- Add the dry ingredients to the wet ingredients, mixing gently until smooth. Pour the batter into the prepared tin and smooth the surface.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Cool in the tin for 10 minutes, then remove from the tin and cool completely on a wire rack.
- Mix all glaze ingredients together. Once the bread has cooled, glaze, letting the glaze run down the sides. Allow to set before slicing. This bread freezes well or can be stored in an airtight container for a few days.
