This mini cheesecake recipe is made with Natura Organic Gluten-Free Oat Beverage for a creamy and delicious treat. Served in cute jars, they’re the perfect dessert for any occasion.
Ingredients
Makes 4 to 6 portions
Cheesecake filling
1 ½ cups raw cashews soaked in boiling water for 1 ½ hours, then drained
⅓ cup pure maple syrup
½ cup Natura Organic Gluten-Free Oat Beverage
¼ teaspoon kosher salt
3 tablespoons coconut oil
2 tablespoons freshly squeezed lemon juice
Crust
1 ½ cups graham cracker crumbs (gluten-free if you like)
2 tablespoons sugar
6 tablespoons vegan butter, melted
Cheery topping
2 heaping cups fresh (or frozen) cherries, de-pitted
¼ cup filtered water
2 tablespoons pure maple syrup
2 tablespoons sugar
½ teaspoon pure vanilla extract
1 teaspoon freshly squeezed lemon juice
Instructions
Prepare the crust
- In a medium-sized bowl, use a fork to mix together graham cracker crumbs and sugar.
- Add melted butter and mix everything together until all the crumbs are moistened. Set aside.
Prepare the filling
- Add drained cashews and the rest of the filling ingredients to the bowl of your food processor or into a high speed blender pitcher.
- Process or blend until creamy and smooth throughout, scraping down the sides as needed.
- Taste and adjust accordingly: Be sure to add more lemon juice if it’s too sweet, more maple syrup if it isn’t sweet enough or a pinch more of salt for more balance!
Prepare the topping
- Prepare the cherry topping by adding all of the ingredients to a medium saucepan and simmering for 15-20 minutes over low heat until very soft throughout.
- Using the back of a fork, break down the cherries but leave some chunks/whole ones as well.
- Let cool before transferring to the refrigerator to completely cool.
Assemble
- Take a clean jar and add about ⅓ of the crust to the bottom. You can push down slightly if your jar allows.
- Fill the remaining ⅔ of the jar with your cheesecake filling, leaving at least 1-2 tablespoons for the cherry topping (or more, if you like).
- Refrigerate for at least 4-6 hours, and enjoy!
