Vegan Ceasar Salad

This lactose- and gluten-free Caesar salad recipe will become your ally for an easy, quick and balanced meal. Made with our unsweetened almond drink, the dressing is tasty and protein-packed, for a satisfying meal.

Ingredients

For the salad

4-5 cups chopped Romaine lettuce

Gluten-free croutons (or croutons of your choice)

Lactose-free Parmesan cheese

For the dressing

½ cup raw cashews (soaked for at least 4 hours or boiled for 10 minutes)

1 cup unsweetened Natura almond milk

¼ cup silken tofu

2 cloves garlic

3 tbsp lemon juice

1 tbsp Dijon mustard

1 tbsp capers, drained

1 tbsp vegan Worcestershire sauce

½ tsp salt

2 tbsp nutritional yeast


Instructions

Prepare the dressing

  • Soak the cashews in boiling water for 10 minutes to soften them.
  • Combine the softened cashews, almond milk, silken tofu, garlic, lemon juice, Dijon mustard, capers, vegan Worcestershire sauce, salt, and nutritional yeast in a blender.
  • Process all ingredients until the dressing is smooth and creamy. Adjust consistency with more almond milk if needed.
  • Refrigerate the dressing for at least an hour before using.

Prepare the salad

  • Wash and chop the Romaine lettuce, and add it to a large salad bowl.
  • Add lactose-free Parmesan and gluten-free croutons to the bowl.
  • Pour the prepared cashew dressing over the salad.
  • Toss until everything is well-coated.
  • Enjoy your crisp, gluten-free Caesar salad!
