Ingredients

1 cup Natura’s Vanilla Oat Milk

2 1⁄2 tsp instant yeast

1⁄3 cup vegan butter, melted and cooled

3 tbsp vegan liquid egg

1 tsp pure vanilla extract

4 tbsp granulated sugar

2 3⁄4 cups all-purpose flour

Oil for frying (I used canola oil)

For the Custard

2 cups Natura’s Vanilla Oat Milk

1⁄2 cup powdered sugar

1⁄2 cup all-purpose flour

1 tbsp vanilla extract

5 tbsp vegan butter

2 tbsp lemon juice

For the Chocolate Glaze

1⁄2 cup chocolate chips

3 tbsp vegan butter


Instructions

For the Donuts:

Warm up the milk slightly; it should be warm but not too hot to touch. Add the yeast and whisk, allowing the yeast to activate for about 10 minutes, until the mixture is fluffy.

Add the rest of the ingredients and mix the dough at low speed using a stand mixer for 8-10 minutes. You can also knead the dough by hand, just knead for an additional 4 minutes or so. The dough should be fluffy and slightly sticky. Transfer the dough to an oiled bowl and let it rise for at least 2 hours in a warm environment.

Roll out the dough on a floured surface until it’s about 1 1⁄2 inches thick. Using a cookie cutter (or a glass if you don’t have one), cut out flat circles from the dough. Repeat the process until all the dough is used.

Cover the donuts with a kitchen towel and let them rise again for 1 hour.

Heat up enough oil to fry the donuts (around 3 cups) over medium-high heat (if you have a kitchen thermometer, the ideal temperature is 350°F).

Fry each donut for 2-3 minutes on each side, taking care not to overcrowd them. Set them on a drying rack and repeat the process with the rest of the donuts.

For the Custard:

In a large pot, whisk all the ingredients together. Bring the mixture to medium-high heat and whisk constantly. It will eventually start to thicken. Continue whisking until it’s a thick paste. Set aside and allow it to cool down completely before filling the donuts.

For the Chocolate Glaze:

Melt the chocolate and butter in the microwave (around 30 seconds), and mix well until you have a smooth glaze.

Donut Assembly:

Transfer the custard to a piping bag. Insert the tip into the hole of each donut and fill them up until the custard comes a bit out of the hole.

Dip the top of each donut into the chocolate glaze, ensuring the top is fully covered with chocolate. Set aside and repeat the process with the rest of the donuts.
