{"id":844,"date":"2021-02-15T20:59:08","date_gmt":"2021-02-15T20:59:08","guid":{"rendered":"https:\/\/natura.ca\/recipes\/crepes-au-chocolat-et-cafe\/"},"modified":"2023-06-13T11:57:20","modified_gmt":"2023-06-13T15:57:20","slug":"crepes-au-chocolat-et-cafe","status":"publish","type":"recipes","link":"https:\/\/natura.ca\/en\/recipes\/crepes-au-chocolat-et-cafe\/","title":{"rendered":"Mocha chocolate crepe tower"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">MOCHA CHOCOLATE PASTRY CREAM:<\/h4>\n\n\n\n<p><strong>4<\/strong>\u00a0egg yolks<br><strong>125 mL (1\/2 cup)<\/strong>\u00a0sugar<br><strong>60 mL (1\/4 cup)<\/strong>\u00a0flour<br><strong>625 mL (2 1\/2 cups)<\/strong>\u00a0Natura soy Chocolate<br><strong>15 mL (1 tbsp)<\/strong>\u00a0instant coffee<br><strong>60 g (2 oz)<\/strong>\u00a0dark chocolate, broken into pieces<br><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">CREPE BATTER:<\/h4>\n\n\n\n<p><strong>3<\/strong>\u00a0eggs<br><strong>15 &#8211; 30 mL (1-2 tbsp)<\/strong>\u00a0sugar<br><strong>310 mL (1 1\/4 cup)<\/strong>\u00a0flour<br><strong>310 mL (1 1\/4 cup)<\/strong>\u00a0Natura soy Vanilla*<br><strong>60 mL (1\/4 cup)<\/strong>\u00a0vegetable oil<br><strong>1 pinch<\/strong>\u00a0ground nutmeg<br>Cooking oil<\/p>\n\n\n\n<p><strong>Servings :<\/strong>&nbsp;6<\/p>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>MOCHA CHOCOLATE PASTRY CREAM: Beat egg yolks and sugar until pale and fluffy. Sift flour into egg mixture and blend slowly. Add Natura. Pour entire mixture into a pan and bring to a boil over low heat, stirring frequently. Add instant coffee and chocolate, stirring until chocolate is completely melted and coffee has dissolved. Let simmer 1-2 minutes before removing from heat. Beat mixture vigorously to obtain a smooth, creamy texture. Let cool.<\/li>\n\n\n\n<li>MEANWHILE, PREPARE THE CREPE BATTER: Beat eggs and gradually blend in flour to prevent a lumpy consistency. Add Natura in stages, making sure to stir frequently, followed by vegetable oil and nutmeg.<\/li>\n\n\n\n<li>When cooking crepes, try to keep them thin and of equal size. Let cool to room temperature.<\/li>\n\n\n\n<li>ASSEMBLY: Spread some pastry cream on first crepe before covering with second crepe, repeating the layering process until no ingredients remain. Be sure to finish off with a crepe.<\/li>\n\n\n\n<li>Garnish with fresh fruits and chocolate-covered coffee beans. Refrigerate. Remove from refrigerator 15-20 minutes before serving. Cut Mocha Chocolate Crepe Tower as you would a pie or cake.<\/li>\n<\/ol>\n\n\n\n<p><em>*Natura light Vanilla can also be used for this recipe.
