This reinvented version of the classic macaroni and cheese is sure to be a hit for weekday or weekend dinners!<\/p>\n\n\n\n<h2 class=\"wp-block-heading has-text-align-center\">Ingredients<\/h2>\n\n\n\n<p><\/p>\n\n\n\n<h5 class=\"wp-block-heading has-text-align-center\">Serves 4-5 portions<\/h5>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>4<\/strong> cups pasta <em>(fusilli, penne or coquillettes)<\/em><\/p>\n\n\n\n<p><strong>2<\/strong> cups butternut squash, peeled and diced<\/p>\n\n\n\n<p><strong>2<\/strong> tbsp. vegetable margarine<\/p>\n\n\n\n<p><strong>2<\/strong> tbsp. all-purpose flour<\/p>\n\n\n\n<p><strong>1 \u2154<\/strong> cup Natura organic soy milk<\/p>\n\n\n\n<p><strong>\u00bd<\/strong> cup vegetable broth<\/p>\n\n\n\n<p><strong>4<\/strong> cups chicken or vegetable stock<\/p>\n\n\n\n<p><strong>\u00bd<\/strong> tsp. garlic powder<\/p>\n\n\n\n<p><strong>\u00bd<\/strong> tsp. onion powder<\/p>\n\n\n\n<p><strong>\u00bd<\/strong> teaspoon smoked paprika<\/p>\n\n\n\n<p><strong>1<\/strong> tsp dried basil<\/p>\n\n\n\n<p><strong>1<\/strong> tsp dried oregano<\/p>\n\n\n\n<p>Pinch of cayenne pepper<\/p>\n\n\n\n<p>Salt and black pepper to taste<\/p>\n\n\n\n<p><strong>\u00bd <\/strong>cup nutritional yeast<\/p>\n\n\n\n<p><strong>\u00bd<\/strong> tsp. Dijon mustard<\/p>\n\n\n\n<p><strong>Toppings:<\/strong> Chopped fresh parsley (optional)<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Instructions<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Preheat oven to 400 F. Place the butternut squash cubes on a baking sheet, add a little olive oil, salt and pepper and roast for 20-25 minutes, until tender.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cook pasta in a large pot of boiling salted water according to package instructions. Drain and set aside.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Meanwhile, in a small saucepan, melt the margarine over medium heat. Add flour and whisk to create a roux. Cook for 1-2 minutes until lightly browned.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Stir the roasted butternut squash into the sauce, along with the vegetable stock. Blend with a blender until smooth.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Return sauce to low heat and add nutritional yeast, Dijon mustard and season to taste. Simmer for a further 2 to 3 minutes. Add and toss cooked pasta with creamy butternut squash sauce.
