Served in cute jars, they\u2019re the perfect dessert for any occasion.<\/strong><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\">Ingredients<\/h2>\n\n\n\n<h5 class=\"has-text-align-center wp-block-heading\">Makes 4 to 6 portions<\/h5>\n\n\n\n<h4 class=\"wp-block-heading\">Cheesecake filling<\/h4>\n\n\n\n<p><strong>1 \u00bd <\/strong>cups raw cashews soaked in boiling water for 1 \u00bd hours, then drained<\/p>\n\n\n\n<p><strong>\u2153<\/strong> cup pure maple syrup<\/p>\n\n\n\n<p><strong>\u00bd<\/strong> cup Natura Organic Gluten-Free Oat Beverage<\/p>\n\n\n\n<p><strong>\u00bc <\/strong>teaspoon kosher salt<\/p>\n\n\n\n<p><strong>3<\/strong> tablespoons coconut oil<\/p>\n\n\n\n<p><strong>2<\/strong> tablespoons freshly squeezed lemon juice<\/p>\n\n\n\n<h4 class=\"has-text-align-center wp-block-heading\">Crust<\/h4>\n\n\n\n<p><strong>1 \u00bd<\/strong> cups graham cracker crumbs (gluten-free if you like)<\/p>\n\n\n\n<p><strong>2<\/strong> tablespoons sugar<\/p>\n\n\n\n<p><strong>6<\/strong> tablespoons vegan butter, melted<\/p>\n\n\n\n<h4 class=\"has-text-align-center wp-block-heading\">Cheery topping<\/h4>\n\n\n\n<p><strong>2<\/strong> heaping cups fresh (or frozen) cherries, de-pitted<\/p>\n\n\n\n<p><strong>\u00bc<\/strong> cup filtered water<\/p>\n\n\n\n<p><strong>2<\/strong> tablespoons pure maple syrup<\/p>\n\n\n\n<p><strong>2<\/strong> tablespoons sugar<\/p>\n\n\n\n<p><strong>\u00bd<\/strong> teaspoon pure vanilla extract<\/p>\n\n\n\n<p><strong>1<\/strong> teaspoon freshly squeezed lemon juice<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Instructions<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">Prepare the crust<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In a medium-sized bowl, use a fork to mix together graham cracker crumbs and sugar. <\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Add melted butter and mix everything together until all the crumbs are moistened. Set aside.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Prepare the filling<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Add drained cashews and the rest of the filling ingredients to the bowl of your food processor or into a high speed blender pitcher. <\/li>\n\n\n\n<li>Process or blend until creamy and smooth throughout, scraping down the sides as needed. <\/li>\n\n\n\n<li>Taste and adjust accordingly: Be sure to add more lemon juice if <strong>it&#8217;s too sweet<\/strong>, more maple syrup if <strong>it isn&#8217;t sweet enough<\/strong> or a pinch more of salt for more balance!<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Prepare the topping<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Prepare the cherry topping by adding all of the ingredients to a medium saucepan and simmering for 15-20 minutes over low heat until very soft throughout. <\/li>\n\n\n\n<li>Using the back of a fork, break down the cherries but leave some chunks\/whole ones as well. <\/li>\n\n\n\n<li>Let cool before transferring to the refrigerator to completely cool.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Assemble<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Take a clean jar and add about \u2153 of the crust to the bottom.
