{"id":2603,"date":"2023-11-11T05:54:05","date_gmt":"2023-11-11T10:54:05","guid":{"rendered":"https:\/\/natura.ca\/?post_type=recipes&#038;p=2603"},"modified":"2023-11-11T05:55:20","modified_gmt":"2023-11-11T10:55:20","slug":"cinnamon-muffins","status":"publish","type":"recipes","link":"https:\/\/natura.ca\/en\/recipes\/cinnamon-muffins\/","title":{"rendered":"Cinnamon Muffins"},"content":{"rendered":"\n<p><strong>Cinnamon Topping<\/strong><\/p>\n\n\n\n<p>1\u20442 cup all-purpose flour<\/p>\n\n\n\n<p>1\u20444 cup yellow sugar<\/p>\n\n\n\n<p>1 tsp ground cinnamon<\/p>\n\n\n\n<p>4 tbsp unsalted butter, cold, cubed into small pieces<\/p>\n\n\n\n<p><strong>Cinnamon Filling<\/strong><\/p>\n\n\n\n<p>1\u20444 cup yellow sugar<\/p>\n\n\n\n<p>2 tsp ground cinnamon<\/p>\n\n\n\n<p><strong>Vanilla Muffin<\/strong><\/p>\n\n\n\n<p>2 cups all-purpose flour<\/p>\n\n\n\n<p>1 cup Naturas Almond Milk<\/p>\n\n\n\n<p>3 tbsp ground flaxseed mixed with 6 tbsp of water<\/p>\n\n\n\n<p>1 1\u20442 tsp ground cinnamon<\/p>\n\n\n\n<p>1\u20442 tsp nutmeg<\/p>\n\n\n\n<p>1 tsp baking powder<\/p>\n\n\n\n<p>1\u20442 tsp baking soda<\/p>\n\n\n\n<p>1\u20442 tsp salt<\/p>\n\n\n\n<p>1\u20442 cup vegan butter, room temperature<\/p>\n\n\n\n<p>3\u20444 cup white sugar<\/p>\n\n\n\n<p>1 tbsp vanilla extract<\/p>\n\n\n\n<p><strong>Instructions<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a large bowl, mix together the ingredients for the cinnamon topping until it forms large clumps. Refrigerate this mixture until you are ready to bake the muffins.<\/li>\n\n\n\n<li>In a KitchenAid bowl, cream together the vegan butter and sugar using the flat beater until fully incorporated. Add in the vanilla extract, cinnamon, nutmeg, baking soda, baking powder, and salt. Whisk until evenly combined.<\/li>\n\n\n\n<li>Add in the flaxseed mixture and half of the almond milk, whisking to combine. Mix in 1 cup of flour, followed by the remaining almond milk. Whisk until fully incorporated, then add in the remaining flour and whisk until you have a smooth batter. Let the batter rest at room temperature for 30 minutes before baking.<\/li>\n\n\n\n<li>Preheat the oven to 400\u00b0F (200\u00b0C) and prepare your muffin tray with muffin liners. In a small bowl, mix together the yellow sugar and ground cinnamon for the filling.<\/li>\n\n\n\n<li>Scoop 2-3 tbsp of the batter into each muffin cup. Layer with 1 tbsp of the cinnamon-sugar filling, followed by 1 tbsp of the cinnamon topping. Gently press the topping down before baking.<\/li>\n\n\n\n<li>Bake the muffins at 400\u00b0F (200\u00b0C) for 10 minutes, then lower the oven temperature to 350\u00b0F (175\u00b0C) and bake for an additional 7 minutes. Check if the muffins are done by inserting a toothpick; if it comes out clean, they are ready.
