Vegetable quiche

Ingredients

1 tbsp Olive oil
1/2 cup chopped onion
1/4 cup chopped bell pepper (different colours)
1/2 cup chopped fennel about 1/2'' long
1/4 cup asparagus about 1/2'' long
1 carrot cut in little sticks
3 eggs
1 cup natur-a almond or soy unsweetened
Salt and pepper to taste
3/4 cup old cheddar cheese (if desired)
your favorite pie crust uncooked

Servings : 4

Preparation

  1. In a sauce pan, gently sauté the vegetables in olive oil, just until they are semi-tender.
  2. Place the vegetables in the uncooked pie crust
  3. In a bowl, mix the eggs, the natur-a, salt and pepper
  4. Pour this mix over the vegetables. Add the cheese (if desired)
  5. Bake in the oven at 350F for 40 minutes or until a knive inserted in the center of the quiche comes out clean.
  6. Serve with a green salad
