250 mL (1 cup) all-purpose unbleached flour
45 mL (3 tbsp.) brown sugar
2 mL (1/2 tsp.) cinnamon
1 mL (1/4 tsp.) nutmeg
1/2 mL (1/8 tsp.) salt
10 mL (2 tsp.) baking powder
190 mL (3/4 cup) Natur-a soy Original or Unsweetened
15 mL (1 tbsp.) soy flour
5 mL (1 tsp.) vanilla extract
30 mL (2 tbsp.) vegetable oil
1 apple, peeled and grated

- Mix brown sugar with cinnamon, nutmeg, and salt. Add all-purpose flour, soy flour, and baking soda. In a separate bowl, whisk together the Natur-a, vanilla extract and oil. Pour liquid ingredients over dry mixture and blend. Fold in apple.
- Pour 1/4 cup of the batter onto hot non-stick griddle or pan. Cook for about two minutes on first side, or until bubbles appear on surface. Flip and cook for another minute or until heated through.
- Serve topped with applesauce or maple syrup.
